Ingredients:
1 Lb. Carrots
1 TBS. Soy Sauce
1 TBS. Dijon Mustard
1 TBS. Ginger Infused Maple Syrup
Olive oil
Salt and Pepper to taste
Wash and halve your carrots in long strips ( For chunky carrots quarter them) toss in olive oil and salt and pepper and roast at 375° for 30 minutes. While baking, mix together the Soy, Dijon, and syrup. Toss over the carrots and bake another 15 minutes. Mix carrots again to evenly coat and bake another 15 minutes to caramelize. Serve hot and enjoy.
